United States to Ban Raw Meat Sales, Following Joint Agency Decision

Based on past conditioning, the latest developments in the US Food and Drug Administration's (FDA) fight to provide Americans with the safest foods possible may not come as such a great surprise.
What started as a ban on raw milk to protect consumer health quickly escalated when the federal health authorities realized just how deadly and polluted American meats are. After all, raw meat, whether beef, pork, or poultry, is actually responsible for a vast majority of food-borne illnesses. 
For example, virtually every E. coli infection can be traced back to the unsanitary conditions in which food-producing animals are being raised, processed, transported, stored, and ultimately sold for human consumption.
As a result, the FDA and US Department of Agriculture (USDA) will be joining forces to assure "undisputable safety" of all meats sold to Americans. And the only feasible way to assure pathogen-free meats, the agencies claim, is to ban raw meat sales. The joint agency agenda is reportedly slated to take effect as early as next year, at which point all meats sold within the US will be pre-cooked.

The FDA and USDA fully realize Americans are becoming more dependent on federal parenting as each year passes, and the rules will ensure nearly all foods Americans eat are irradiated, fumigated, and cooked for our safety.

Raw Meats Pegged as 'Prime Culprits' in Foodborne Disease

Most of the meats you buy in your local grocery store come from animals raised on massive industrial farming arrangements, aptly called "confined animal feeding operations" (CAFOs).  Based on the massive amounts of antibiotics used to keep these animals alive in such conditions, one might also call them "confined antibiotic feeding operations".

Over 26,000 Americans die each year from antibiotic resistant infections, a small price to pay for our indulgence of CAFO meats.
Covered in feces and urine, dehydrated, and often sickly, these animals are then slaughtered using mechanized tools and procedures that convey this infection-loaded excreta into the final meat product. 
Dr. Shiv Chopra has discussed this sickening reality in my newsletter on a number of occasions. Dr. Shiv Chopra was a drug company insider and also worked for what is now Health Canada -- the Canadian equivalent of the FDA – for 35 years.
The food and food-contaminant combination that causes the most harm to human health is campylobacter in poultry, which sickens more than 600,000 people and costs the US an estimated $1.3 billion a year. In second place is toxoplasma in pork, costing society another $1.2 billion annually.  
Despite the obvious reality of foodborne illness, very little was actually known about which foods are the most risky, until a report1 from the University of Florida's Emerging Pathogens Institute revealed the pathogen-food combinations most likely to make you sick. The report, issued in 2011, showed that the data overwhelmingly pointed to tainted meats as the prime culprits.
Realizing that pasteurization of animal products such as milk falls way short of protecting human health, the FDA and USDA have now decided to tackle the number one source of costly foodborne illness, namely raw meats. According to a confidential source within the newly created joint agency taskforce:
"If people are careless enough to drink raw milk straight from a cow's udder, they're probably too ignorant to purchasing raw meat.  We've decided to just go ahead and cook everything. Americans won't be trusted with any raw meats or dairy products going forward." 

"We believe that, in the end, most Americans will appreciate these efforts to keep them safe, and will come to embrace the added convenience of pasteurized- and other pre-cooked meats the current highly processed food diet controlled by our federal government.  We will also ensure additional subsidies are added for the CAFO industries to pay for this critical security measure."

Farm-to-Consumer Sales to Be Eliminated

As an extra measure, all animals will be tagged with transmitters to ensure no direct farm-to-consumer sales will occur. While this may sound drastic to some, it's certainly not new. Tagging of livestock for traceability purposes is already part and parcel of the USDA's Animal Disease Traceability Framework program,2 which regulates interstate sales of livestock.

Food processors have managed to reduce a farmers share of the goods they sell to just 7% of the retail price.  This also ensures the continued erosion of the small family farms, where dangerous practices of selling direct to consumer may occur.   
The final rule on this program was issued on January 9, 2013. The rule became effective on March 11, 2013. Four years ago, farmers criticized the plan as "draconian" in scope,3 warning it was just another scheme to control the livestock industry and favoring multinational meat packers. Little did they (or anyone else, for that matter) realize this program would become a key tool for banning the sale of raw meat altogether.

Commercial Pre-Cooking Guidelines for Safer Meats

As described in documentation4 by the Food and Agriculture Organization of the United Nations (FAO), precooking substantially reduces the bacterial content of raw meats and other trimmings. (Meat trimmings, which are particularly prone to pathogenic contamination must already undergo both precooking and a second heat treatment.)
Other changes under consideration include a health claim on foods processed with the fumigant sulfuryl fluoride, indicating its benefit to dental health. As recently discussed by FluorideAlert.org,6 an amendment to the Farm Bill orders the US Environmental Protection Agency (EPA) to ignore its previous ruling7 that fluoride left in food treated with sulfuryl fluoride is unsafe for consumers. 

The FDA, which oversees health claims on food labels, is currently reviewing the application to ensure the health message complies with labeling requirements.

FDA/USDA Plan for Safeguarding Children and Elderly

There are even rumors of closed-door discussions about premasticated meat products, aimed at young children and the elderly, both of which have been identified as groups most likely to choke to death on solid meats. 

According to the National Safety Council, choking accounts for an estimated 2,500 deaths each year in the US,8 and children under the age of three are at greatest risk. A 2010 study published in the journal Maternal & Child Nutrition9 discusses the health benefits of premasticated foods on child health.
According to previous studies, 63 percent of Chinese university students received premasticated food as infants, suggesting there may be sufficient societal acceptance of such foodstuffs, despite cross-cultural studies failing to show any significant prevalence of this practice in the West. The study also raises questions about the safety of infant exposure to another person's saliva (typically the mother's). 

Clearly, in the case of mass produced foods, such concerns would be superfluous, as the premastication would be done by mechanical means, employing a pharmaceutical grade digestive enzyme solution, guaranteed to be void of any potential pathogens associated with human saliva.

Burgeoning Sales of Breast Milk Spawns New Regulatory Considerations

Breast milk is also being reevaluated for safety, following an emerging trend of lactating mothers selling their milk. The practice started gaining traction several years ago, and I initially wrote about this novel opportunity back in 2011. Nursing women can earn upwards of $1,200 a month from selling their excess breast milk. Many simply pair up online via Craigslist and other classified sites.
It was really only a matter of time before the pasteurization issue would crop up, seeing how there's virtually no difference between raw cow's milk and raw breast milk. Both contain live enzymes and bacteria. While the FDA has yet to take a stand against breast milk when the baby is nursing at the breast, it claims there are significant health risks involved when milk is expelled from the breast, and then consumed from a bottle without undergoing pasteurization. As previously stated by the La Leche League:10
"Health care providers and researchers have expressed concern that the casual exchange of human milk could be a potential route of transmission for drugs and viruses."
It's still unclear when the FDA will publish its proposed rule on human milk consumption, but I wouldn't be surprised if it will be modeled after human milk banks such as the Human Milk Banking Association of North America,11 which pasteurizes all donated breast milk prior to distribution.

I’ve often stated that if every American decided to not purchase food that comes from CAFOs, the entire system would collapse overnight. If this wasn't an April Fool's joke, the implementation of a nationwide ban on raw meat would have permanently closed this window of opportunity for change. Fortunately, sourcing your foods from a local farmer is still one of your best bets to ensure you're getting wholesome food, and I would encourage you to do so, to strenghten the availability of a truly sustainable food supply. The following organizations can help you locate farm-fresh foods in your local area:

Revealing Look at the Sourcing of Our Food Supply

As KPBS’ Joanne Faryon reports, “the food chain no longer looks like it used to.” Fish no longer eat other fish, and cattle eat very little grass, which is their natural food source. Instead, cattle eat corn, chickens eat corn and fish, and fish eat cows and poultry... Similarly, fresh produce like fruits and vegetables are primarily sold to foreign markets.
California oranges, for example, are exported to far flung places like Japan, while Americans eat oranges from Australia—presumably because Americans prefer the deeper orange color of Australian oranges, and the fact that they’re easier to peel. As a result, the carbon footprint of most foods sold in your local grocery store is massive, having made its way thousands of miles from where it was grown.

The Beef About American Cattle Farming

While food prices appear to be on the rise, we actually spend less on our food today than we did a generation ago, thanks to modern food production practices. The ultimate price, however, may be greater than anyone ever expected.
For starters, modern agricultural practices are taking a heavy toll on soil and environmental health, and the way we raise animal foods, especially in the US, results in animal products that are far inferior compared to their ancestral past.  
The practice of raising animals in confined feeding operations (CAFOs) is also having a major detrimental impact on our environment and is a primary source of environmental pollution and rising carbon dioxide levels in the atmosphere.
Last year, 63 million tons of beef was produced worldwide.1 As stated in the film, while making up only five percent of the world’s population, Americans consume nearly 20 percent of all the beef produced globally.
But just how is all this beef produced? The film summarizes how the typical cow makes its way from birth to slaughter in the US. A generation or so ago, cattle would be mostly pasture-raised and sold for slaughter around the age of two or three. The meat would then be taken to the local market.
Today, California cows start out being raised on pasture for about six months before being sold, typically changing hands twice, before ending up in a CAFO feedlot. Feedlots, which were introduced after World War II, are large pens that house tens of thousands of cattle—some can hold herds up to 100,000 animals.
Here, they’re fattened up on a corn-based diet before being slaughtered about four or five months later. All in all, today’s beef is grown in about half the time compared to a generation ago.
Besides corn, virtually all beef sold in American grocery stores comes from cattle injected with hormones. Corn fattens the cattle, but consumers don’t like all that grizzly fat, so hormones are used to make the animal produce more lean muscle tissue. This improves profits, as it increases the animals’ growth by about 10 percent.
Ironically, as Faryon points out, it’s the corn that makes the cattle fat, so if we didn’t feed them corn, we wouldn’t have to give them hormones to minimize fat production.  Another question well worth pondering is this: with all this hormone-laced beef, along with the American corn-based processed food diet (think high fructose corn syrup), is it any surprise Americans are growing fatter, faster, as well?

Farmed Fish—Feedlots of the Sea...

Industrial fish farming, or aquaculture, is the fastest growing form of food production in the world.2 About half of the world’s seafood now comes from fish farms, including in the US, and this is expected to increase. At first glance, farmed fish may seem like a good idea to help protect wild seafood populations from overfishing while meeting the nutritional needs of an ever-expanding global population.  
In reality, however, the industry is plagued with many of the same problems surrounding land-based CAFOs, including pollution, disease and inferior nutritional quality. It’s getting so bad that fish farms can easily be described as “CAFOs of the sea.” Here we see an even greater distortion of the food chain. Wild fish eat other fish, but farmed fish can be fed a concoction of ingredients they’d NEVER encounter otherwise, such as soy protein and beef or chicken byproducts, including cattle blood, bone, and chicken feathers.
The reason for this is because, as explained by Jeffrey Graham in the film, it takes about five pounds of fish to produce one pound of growth in salmon. This clearly negates the original rationale for fish farming, which is to prevent the depletion of natural fish stocks. The solution is to replace the fish meal in the diet with soy protein and other protein products...The question is, is this really a healthy solution?
Europe has banned processing byproducts from cattle due to the potential risk of spreading mad cow disease (bovine spongiform encephalopathy, or BSE), a neurodegenerative disease that can affect humans eating contaminated beef. While there have been no reports of humans contracting mad cow from eating farmed fish, the theoretical possibility is there. Besides that, it seems clear that a fish that eats meat byproducts opposed to its natural diet of other fish is not going to have the same nutritional makeup as wild fish.
Then there’s the increased risk of fish diseases spreading to wild fish. The close quarters where farmed fish are raised (combined with their unnatural diets) means disease can spread quickly, and because farmed fish are often raised in pens in the ocean, pathogens can spread like wildfire and contaminate any wild fish swimming past. I wrote about this last summer in the article “Salmon Confidential.”

The Unsavory Truth About Factory Farmed Chicken

Large commercial chicken facilities typically house tens of thousands of hens and can even go up to hundreds of thousands of hens who, yet again, are fed a diet consisting primarily of corn. Processing byproducts such as chicken feathers can also be added to the feed. Antibiotics are routinely used in most facilities, but hormones are not permitted in American-raised chickens. When it comes to labels such as “free-range” and “natural,” it’s buyer beware...
The definitions of "free-range" are such that the commercial egg industry can run industrial farm egg laying facilities and still call them "free-range" eggs, despite the fact that the birds' foraging conditions are far from what you'd call natural. True free-range eggs are from hens that roam freely outdoors on a pasture where they can forage for their natural diet, which includes seeds, green plants, insects, and worms.
When you’re housing tens of thousands of chickens, you clearly cannot allow them all to freely roam and scavenge for food outdoors. At best, CAFO hens may be let out into a barren outdoor lot for mere minutes a day. Your best source for pastured chicken (and fresh eggs) is a local farmer that allows his hens to forage freely outdoors. If you live in an urban area, visiting a local farmer’s market is typically the quickest route to finding high-quality chicken and eggs.

Can We Grow a Fair and Sustainable Food System?

Many believe the answer to world hunger is further expansion of large-scale agriculture; others place their bets on genetically engineered (GE) crops. But are factory farms and large-scale GE farming really going to solve the problem? Evidence suggests the answer is a resounding NO. In fact, our modern agricultural system is the very heart of the problem...
Modern monoculture has severely depleted soils of essential nutrients and microorganisms, and poor soil quality is a core problem facing farmers across the globe. Monoculture (or monocropping) is defined as the high-yield agricultural practice of growing a single crop year after year on the same land, in the absence of rotation through other crops. (Corn, soybeans, wheat, and to some degree rice, are the most common crops grown with monocropping techniques. As discussed above, corn and soy are two of the primary ingredients in feed given to livestock, be they chickens, cattle or fish.)
The Earth's soil is now depleting at more than 13 percent the rate it can be replaced due to our chemical-based agriculture system. Massive monoculture has also led to the extinction of 75 percent of the world's crop varieties over the last century. Additionally, modern agriculture is extremely energy dependent. It is estimated that every consumer in the Western world eats the equivalent of 66 barrels of oil per year. That's how much oil is needed to produce the food on your plate.

Do You Really Want to Eat Factory Farmed Animals?

If you were to grow food for you own family, my guess is that you would do so with extreme care, using the best seeds, the healthiest animals, and the least amount of chemical additives. Yet, when most people buy their food, they have no idea where it actually comes from, and conversely the people who grow this food have no idea who ends up eating it. When people are able to grow food for the faceless masses, I think it somehow justifies these terrible practices that have become commonplace: pumping animals full of hormones and drugs, dousing vegetables with chemical pesticides and fertilizers, and introducing genetically modified seeds into the environment.
If you had to see the animal you were about to eat before it makes its way to the supermarket or your dinner table, would you choose one that had lived out its days in a filthy, crowded cage? One that had been mutilated and tormented, then pumped full of hormones and antibiotics, while being fed pesticide-laden grains it was not designed to eat?
Or would you choose one that had lived a nurtured and well cared for life, free to roam on pasture, see the sunlight and breathe in fresh air? One that was fed its natural diet and nothing more? The choice is obvious, which is exactly why agri-business has done such a masterful job of concealing what really goes on from the vast majority of Americans. All you see is a cellophane-wrapped package, maybe a picture of a barn with happy cows and chickens standing near. In many cases, if you could really see how that animal was raised, you would likely shield your children’s eyes, then turn away in disgust.
Factory farms allow us to be removed from taking personal responsibility for raising our own food. There is no one to be held accountable for raising garbage food or treating animals inhumanely because the system has taken on a life of its own. By far, the vast majority of food at your local supermarket comes from these polluting, inhumane farm conglomerations. So if you want to stop supporting them, you first need to find a new place to shop.

Become Part of a Growing Movement

Fortunately, it’s relatively easy to find a humane and reliable source for your food -- sources that are growing food with the health of the environment and the animals as the driving forces. At LocalHarvest.org, for instance, you can enter your zip code and find farmers' markets, family farms, and other sources of sustainably grown food in your area, all with the click of a button. The more we all make it a point to only buy food from a source we know and trust, the faster factory farming will become a shameful practice of the past. Farmers and lovers of real food show us that change IS possible. But your involvement is required. Here are a few suggestions for how you can take affirmative action:  
  1. Buy local products whenever possible. Otherwise, buy organic and fair-trade products.
  2. Shop at your local farmers market, join a CSA (Community Supported Agriculture), or buy from local grocers and co-ops committed to selling local foods.
  3. Support restaurants and food vendors that buy locally produced food.
  4. Avoid genetically engineered (GMO) foods. Buying certified organic ensures your food is non-GM.
  5. Cook, can, ferment, dry, and freeze. Return to the basics of cooking, and pass these skills on to your children.
  6. Grow your own garden, or volunteer at a community garden. Teach your children how to garden and where their food comes from.
  7. Volunteer and/or financially support an organization committed to promoting a sustainable food system.
  8. Get involved in your community. Influence what your child eats by engaging the school board. Effect city policies by learning about zoning and attending city council meetings. Learn about the federal policies that affect your food choice, and let your congressperson know what you think.
  9. Spread the word! Share this article with your friends, family, and everyone else you know.

The Health Benefits of Consuming Organ Meats

The consumption of organ meats has fallen out of favor in the West, which may be a mixed blessing. Liver, kidney, heart and other animal organs from organically raised, grass-fed animals are some of the most nutrient-rich foods you can eat.
Unfortunately, that’s not how most food animals are raised these days. In today’s world of high calorie/high carbohydrate but low nutrient foods, most people would benefit greatly from adding these superfoods back into their diet.
However, I advise against eating organ meats from animals raised in confined animal feeding operations (CAFOs). The diets, veterinary drugs and living conditions of such animals are not likely to result in healthy organs, so be sure to find out where the organs came from, should you decide to pick some up at your local grocer.
Many traditional cultures and their medicine men—including Native Americans—believe that eating the organs from a healthy animal supports the organs of the eater.
For example, a traditional way of treating a person with a weak heart was to feed the person the heart of a healthy animal. Similarly, eating the brains of a healthy animal was believed to support clear thinking, and animal kidneys were fed to people suffering from urinary maladies.
There are countless reports about the success of these types of traditional practices. We can thank Dr. Weston A. Price for an enormous body of research about the health benefits of traditional diets.1

The 'Isaac Newton of Nutrition'

Dr. Weston A. Price2 was a Cleveland dentist who has been called the “Isaac Newton of Nutrition.” Dr. Price traveled all over the world studying the dietary practices of healthy people from traditional cultures.
What he found was that nearly every culture placed a high value on consuming animals in their entirety, making use of the organs, blood, bones, and everything else—a far cry from Western culinary snobbery, which pretty much limits animal foods to muscle tissue and nothing else.
Traditional preparations involve a good deal of work in terms of cleaning, trimming, soaking, pounding and so on because membranes, blood vessels and other inedible parts must be removed from animal organs before they can be consumed, requiring significant time and labor. Why did they bother with all of this work?
They knew that eating these organs would support the natural functioning of their bodies. And they were right—the nutritional benefits of organ meats are now being confirmed by modern science.
Organ meat is a nutritional powerhouse, loaded with vitamins, minerals, amino acids and other compounds vital to your health. Liver in particular is packed with nutrients, which is why predatory animals eat it first and why it has been so highly prized throughout history.
Unfortunately, organ meats have been unfairly demonized in the West thanks to some persistent dietary myths, including beliefs that animal fat and cholesterol are bad for your health. Nothing could be farther from the truth!
Dr. Price, who studied this extensively, found that native cultures who maintained traditional diets—whole foods from plants and animals—had excellent teeth and were free of the chronic diseases plaguing society today. They experienced very little cancer, heart disease, diabetes, mental illness, or even birth defects.3 But why? What accounts for such drastic health differences?

Traditional versus Contemporary Diets

When Dr. Price analyzed and compared the nutrient value of foods eaten by traditional versus modern cultures, he found that a traditional diet provided at least four times the water-soluble vitamins, calcium and other minerals, and at least 10 times the fat-soluble vitamins, such as A and D.
These fat-soluble vitamins are present only in animal fats—butter, lard, egg yolks, fish oils, and foods with fat-rich cellular membranes such as liver and other organ meats. Of course, these are the foods now shunned by Westerners as unhealthful. Is it any wonder that adopting a modern diet spells disaster for your health?

The Offal Truth

The consumable parts of an animal that are not skeletal muscle are called offal, which literally means “off fall,” or the pieces that fall off a carcass when it’s butchered. This includes the heart, liver, lungs, kidneys, pancreas and all other abdominal organs, as well as the tails, feet, brains, tongue, and yes, even the testicles.4
In the US, the term “organ meats” is more commonly used, and when these parts come from birds, they are usually referred to as giblets.5 Sweetbreads refer to the thymus gland or pancreas of a young cow, lamb or pig.
In nature, most animals go straight for the organs of their prey, saving the muscle meats for later. This is because animals instinctively know that organ meats are the densest source of nutrition. In fact, organs are the superfoods of the animal kingdom. This is why “glandulars,”6 supplements made from dried tissues of animal organs and glands, pack some powerful therapeutic punches when taken under the guidance of a skilled medical practitioner.

Organ Meats: The Superfoods of the Animal World

Organ meats offer a rich mélange of nutrients your body needs for optimal function, in concentrations hard to find anywhere else. The most significant ones are outlined in the following table.7

The Discovery of “Fat-Soluble Activators”

One of Dr. Price’s most significant contributions to nutrition science was the concept of fat-soluble activators, which serve as potent catalysts for mineral absorption. Without them, minerals cannot by used by your body, no matter how plentiful they may be in your diet. Dr. Price was quite ahead of his time—modern research has since validated most of his findings.
Dr. Price identified three primary fat-soluble activators: vitamins A and D, and one he called “Activator X,” because he didn’t know exactly what it was, only that it was present in certain fatty parts of animals (especially the organ meats) that fed on young green growing plants or microorganisms, as well as in oily fish and shellfish. This powerful nutrient is now believed to be vitamin K2, a nutrient that is far more important than most people realize.12, 13
Vitamin D, is required for mineral metabolism, healthy bones, optimal nervous system function, muscle tone, reproductive health, insulin production, and protection from depression14 and every type of chronic illness, from cancer to heart disease. Vitamin D’s list of benefits keeps growing with each passing year. However, it’s important to realize that these nutrients are dependent on the animal having been raised and fed in a natural manner. As stated by the Weston A. Price Foundation:15
“The vital roles of these fat-soluble vitamins and the high levels found in the diets of healthy traditional peoples confirm the importance of pasture-feeding livestock. If domestic animals are not consuming green grass, vitamins A and K will be largely missing from their fat, organ meats, butterfat and egg yolks; if the animals are not raised in the sunlight, vitamin D will be largely missing from these foods.”

Vitamin A Myth-Busting

Impressively abundant in organ meats from pastured animals, Vitamin A is a catalyst for multiple biochemical processes. Vitamin A is vital for prevention of birth defects, prevention of infection, hormone production, optimal thyroid function, good digestion, good vision, and healthy bones and blood. Without it, your body cannot utilize protein, minerals and water-soluble vitamins. Vitamin A is also an antioxidant that helps protect you from pollutants, free radicals, and cancer.
Contrary to what many vegetarians believe, the type of vitamin A obtained from plants (carotene) is much different than the animal-derived form. Carotenes from vibrantly colored fruits and vegetable are  a great antioxidant and can be converted into true vitamin A in your upper intestine, but many people are unable to convert it, especially if their diets contain insufficient fat.
Dr. Price discovered that the diets of traditional peoples contained at least 10 times more vitamin A from animal sources than found in the American diet of his day. That difference may be even starker now, as his research was done decades ago.
When people began taking synthetic vitamin A supplements, we began to see vitamin A toxicity. But this does not happen with natural vitamin A from real, whole foods. Therefore, the advice to refrain from organ meats during pregnancy is unfounded. It is best to obtain your vitamin A from natural sources like yellow butter, egg yolks, and organ meats.
Please realize that antibiotics, laxatives, fat substitutes and cholesterol-lowering drugs interfere with vitamin-A absorption. Another common myth is that organ meats cause gout. This is a warped, oversimplified misinterpretation of the biochemical processes that lead to gout.16 Gout results from a buildup of uric acid, which is more a function of insulin resistance related to overconsumption of refined carbohydrates and sugar. Uric acid is a byproduct of your body’s metabolism of dietary sugar—especially fructose.
Excess dietary protein with insufficient dietary fat may also raise your risk for gout. This is why lean meats should not be consumed without adding a healthful fat, and the leaner organ meats (such as the heart and liver) are no exception. The one nutrient most protective against gout is vitamin A, because it helps protect your kidneys—healthy kidneys prevent the buildup of uric acid by excreting it in your urine. Therefore, organ meats actually protect you from gout, rather than cause it.

Liver—Nature’s Most Concentrated Source of Vitamin A

Liver is the most commonly consumed organ meat in the US—and for good reason: it’s one of the most nutrient-dense foods in existence. Liver is held sacred by many African tribes, and practically every cuisine has liver specialties. It simply contains more nutrients, gram for gram, than any other food:17
  • Liver is nature’s most concentrated source of vitamin A (retinol)
  • It contains an abundant, highly usable form of iron
  • Three ounces of beef liver contains almost three times as much choline as one egg
  • Liver is one of the best sources of copper, folic acid, cholesterol, and purines
  • It also contains a mysterious “anti-fatigue factor,” making it a favorite among athletes
The liver is often described as an organ that “filters” your blood of toxins, which may seem concerning in terms of eating it. In reality, laboratory analysis has proven that liver is actually completely safe for consumption and has no higher concentration of toxins than the rest of the body. This is due to the fact that your liver is not really a “filter,” but more of a chemical processing plant, rendering toxins inert and shuttling them out of your body. If your liver contains large amounts of toxins, so do you! And the same goes for the animals you consume. What this means is, the cleaner the animal whose organs you are consuming, the cleaner your food will be, whether it’s a steak or an organ.18

IMPORTANT: Know Where Your Meat Comes From

In another article19 written by a meat processor, Bob Martin explains the differences between products derived from grain-fed animals versus from grass-fed animals. He reports that many grain-finished livers are “condemned,” whereas this does not happen with grass-finished livers. He is very straight in his recommendation to avoid meat and organs coming from animals that are grain-fed or grain-finished, such as those produced by CAFOs.
As stated earlier, it is safest to restrict all of your meats to pastured, or at the very least, grass-finished animals. In the wake ofmad cow disease, it is particularly important to consume animals raised on pasture and fed a biologically appropriate diet, which virtually eliminates their risk of mad cow disease, as well as many other dangerous contaminants.20

Recipes and Other Offal Resources

If you haven’t been eating organ meats lately, perhaps you abandoned them because they were thrust upon you as a child, or maybe you’ve never been able to get past their appearance. They look like entrails because they ARE entrails, which are difficult to disguise. You just may have to get over it... for the sake of your health!  Fortunately, organ meats don’t have to be the tough, dried out, overcooked liver-and-onions of yesteryear that were more like shoe leather than meat.
Finding good organ meat recipes can be somewhat of a challenge, as they are more of a niche specialty today—but they are out there. In order to make your journey a bit easier, I’ve assimilated a list of resources to perhaps inspire you into trying some new things. The following are merely a starting point—I’m sure you can find others. Paleo recipe websites often have interesting and unique organ meat recipes, and there are an abundance of those. Happy hunting!
  • An article called “The Liver Files” on the Weston Price website has great nutrition information about liver, as well as liver recipes from around the world17
  • Sally Fallon gives a big thumbs up to a cookbook devoted to organ meats, The Whole Beast: Nose to Tail Eating, by Fergus Henderson.21
  • Chris Kresser’s article “How to Eat More Organ Meats” contains nutritional information as well as links to a number of recipes, by organ type.22
  • Chef Chris Cosentino’s website Offal Good is completely devoted to “everything offal” and is an interesting read, includingrecipes, videos, and offal photos NOT for the faint of heart—but perfect for the culinarily curious! (Chef Cosentino is featured in the video at the top of this article.)
  • Huffington Post offers a few select recipes for offal food.23

  • For the nutritional composition of organ meats, I found a couple of resources. The Self Nutrition Data site is a good resource for comparing nutrient levels of many foods, including organ meats. And an online publication called “Nutritional Composition of Red Meat” from the University of Wollongong (Australia) has charts with all sorts of nutritional data for red meats, including organ meats and wild game.
